I guess I should've posted this yesterday, since there's a moderation wait now, but I wasn't thinking of it. Whoops.
Anyway, think of those zesty, seasoned/spiced fries from, say, Arby's. Now, how do you get your homemade fries to have that kind of taste? Every St.Patty's, we do corned beef and fries (they stand a better chance with the kiddo than baked potatos), and every year, I try to duplicate that kind of fry, without success. I've tried assorted combinations of spices and seasonings and oil-coatings before the seasoning (we bake, not fry), but never seem to pick the right one. Bags of frozen, pre-made ones don't help, because the ingredient list just tends to say, "Spices." Yeah, thanks, I knew that much. So, does anyone have a proven tactic for that kind of taste effect, for those who would rather go homemade than pay for extra grease?
