Tea Sandwich Help!

Hello everyone! Hope your having a good week so far!

I need help! I have been asked to cater a "High Tea"  I need to make the following sandwiches:
  1. Egg Salad
  2. Chicken Salad
  3. Open Faced Cucumber Sandwiches
  4. Open Faced Tomato and Basil Sandwiches

I have never ever made any of these, so any help would be appreicated, AND! I would love your BEST Recipes for ( Read more... )

Ya Im with ya on the Martha thing hehe..
I don't think this group would like Curry, but my husband and I love it so Id like to have it for us if you dont mind typing it up :)

I make a curried egg salad that always gets raves. You make it by boiling a dozen eggs (more for more sandwiches), slicing the eggs, then adding a tablespoon of mayo (just enough to get the texture), then adding curry, salt, and pepper to taste. You can also throw in some chopped celery for crunch, but not necessary.

When I think tomato and basil, I think "and fresh mozzarella, and a drizzle of good olive oil. Or *good* balsamic vinegar."

Try and find good tomatoes. I don't know where you're located, but this time of year the tomatoes around here are usually like pink styrofoam.

thats exactly what I was thinking, but didnt know if that was "proper" tea sandwich.
Im in Florida, I can get some goooood tomatoes right now

Hi! I'm english and that is DEFINITELY not a "proper" English tea sandwich. Try some potted meat sandwiches!!

There's a Martha recipe for what she liked to call "BLTea sanwiches", which was a combination of the following (If I remember right)

-about a 1/2 lb of bacon, cooked and finely chopped
-about a 1/3 a cup of sundried tomatoes, very finely chopped
-about a 1/2 cup of mayonnaise

basically mix it all up, spread a thin layer (I meann seriously thin because of how strong the bacon and sundried tomato are) between slices of crustless white bread topped with boston lettuce.

Cuz everything's better with bacon.
