Accidental bean soup

Jan 12, 2007 21:16

I was craving split pea soup, but the grocery was out of split peas, and being too lazy to go to another store, I grabbed a package of '15-bean soup mix' (just a bag of beans with what looked like a rather nasty packet of "ham flavor"

Anyways, brought it home, and started throwing stuff in. Nothing fancy, mind you, but hearty and good on a chilly (well, SoCal chilly) evening. I pretty much decided to do with it what I do with my split peas, so you can substitue those or lentils if you like.

1 bag 15-bean soup mix (1lb assorted beans) 'ham flavor' packet discarded (ew!)
2 strips bacon, chopped into small pieces
1 medium yellow onion
4 cloves garlic, chopped
1 stalk celery, chopped
handful baby carrots, chopped
1 package Adelle's chicken artichoke sausage, chopped into small peices
1 large chicken bullion cube
2 1/2 quarts cold water
2 medium tomatos, pureed in a food processor (or a can of tomatos, if you prefer)

In a large pot, cook the bacon until crispy. Add to the pot the onion and garlic, cook for a minute or two, then dump in the rest of the veggies. Saute these for another 2-3 minutes, then add the sausage, beans, bullion, and water. Heat to boiling, allow to boil for about 10 minutes, then lower heat to a high simmer. Add tomato puree, and simmer for an hour and a half-2 hours till beans are tender.

I had meant to throw in some frozen corn I had, but forgot entirely. This was good that night, but just heavenly the next day!
