Indian Lentils with Coconut

I got this recipe out of magazine article about the world's healthiest foods (I wish I remembered which magazine). I'm not normally a fan of lentils, but I made this last night and loved it. It's great comfort food.

Indian Lentils with Coconut

1 tsp olive oil
1 cup chopped onion
1 lb red lentils, picked over and rinsed
14 oz. can reduced-fat coconut milk
4 cups water
1 bay leaf
1 tsp salt
1/4 fresh ground pepper

Heat the oil in a large saucepan. Saute the onion for about 5 minutes, till it starts to brown. Add the lentils, coconut milk, water, and bay leaf. Bring to a boil over medium-high heat. Lower heat and let simmer, stirring occasionally, till lentils are soft (the recipe said this would take 40 minutes but it only took me about 20). Remove from heat. Remove bay leaf and stir in salt and pepper.
