Q's on chicken thighs & penne vodka

Hi! I've been apart of this community for awhile, and I haev to say I LOVE IT! =D Such wonderul, yummy-returning recipes, lol. Great for a college student. But this is my first post here and I had a few questions...

1. Does anyone have any advice on how to debone chicken thighs? <-- I have a bunch stored in my freezer

2. Speaking of chicken thighs, would anyone like to share some recipes for them? I'm getting a little tired of the normal baking with seasoned salts & what not. Is there anything interesting & new I can do with them?

3. Lastly, Penne Vodka pasta - I've suddenly got a huge craving for this after having it at a restuarant a few weeks back. So is there any fool-proof recipe for this dish? And also, I'm one year shy of 21, so using actual Vodka is a bit hard for me ... is there any "pre-made" tomato-vodka sauce that I can get at the store or something?

Sorry for bombarding this post with all questions. I'm not a very experienced cook, so any help would be greatly appreciated!
