Truffles

I've decided that I want to try my hand at making truffles, perhaps for Valentine's Day. I've never made them before, but from what I understand it is just a basic ganache (chocolate and whipping cream) that is cooled and formed into balls, and then either rolled in cocoa powder (or nuts, or whatever) or dipped in chocolate... am I right ( Read more... )

for a really simple ganache, it's a 1:1 ratio by weight.

Alton Brown had a dynamite truffle recipe on Good Eats.

He uses brandy as a flavoring in his, but I've substituted a couple of different liquers to very good effect.

Chocolate Truffles

2 cups semi sweet chocotae morsels
2 tbs. karo syrup (either dark or light)
1/4 cup whipping cream
2/3 cup sifted powdered sugar
1/2 cup nuts, finely chopped
Flaked coconut, small deorating candies, and sifted powdered sugar

Heat morsels, corn syrup and cream in bowl placed over larger bowl filled with hot water. Beat with electric mixer or wire whisk until smooth. Stir in sugar and nuts. Cool to room temperature or chill slightly. shape into small balls. Roll in coconut, candied or powdered sugar. Place in single layer in a tightly covered container. Stor in cool place.
