Foodies, I need your help......

We had plans to make lots of fresh veggie foods this week and weekend and eat and then discovered that my father-in-law is in the hospital and so we will have to go out of town to visit with him mid-week.

I bought things to make a huge match of my Veggie lasagna and that normally lasts us a few days... the veggies won't last until we get home so I'm making the lasagna tonight, but I know we won't eat it all before Wednesday.....

Here is what I need to know. Would it be ok to freeze half of it, I've never frozen my lasagna before and am not sure if it will work well.

It has eggplant, squashes, mushrooms, tomatoes and noodles and cheese.... mostly....

Do you think it would be ok to make the large pan like I had planned and freeze half?

This may sound silly... but how? In zip-lock bags? would that work best?
