Mango Chicken
Combine 3 tablespoons soy sauce, 1 tablespoon honey, 3/4 teaspoons ginger, 1 1/2 teaspoons flour, 1/4 teaspoon paprika. Cut 12 oz chicken into strips, sprinkle with pepper, saute with 1 cup chopped onion until done. Add 1 cup sliced mushrooms, and 1 cup chopped mango. Saute for 2 minutes. Add soy sauce mixture, bring to boil, cook for 2 minutes more. Serve over rice.
I got this recipe from a back issue of Cooking Light, and made some modifications. I assume canned peaches would work nearly as well as mangoes, if you can't find mangoes around you.
If you use canned mangoes or canned peaches, instead of honey, try 1/4 to 1/2 cup of the juice from the can -- it's delicious, and helps that fruity flavor permeate the entire recipe. Also, I did this with chickpeas instead of chicken once, and it was *fabulous*, and totally vegetarian-friendly.
