Pasta and what......

I am having some friends for dinner next weekend and thought a dinner with pasta and roasted veggies would be good, maybe add some grilled chicken and a spinach salad.

Now my question. I have seen on many cooking shows how people use veggies that have been roasted in a pan in the oven but they never say how long and what they should be like texture wise afterwards and what kind of sauce (do not want to do tomatoe) would you use?

Also some suggestions on good veggies to use would be great.
