Dilled Summer Squash

Apr 25, 2012 11:16

D doesn't care for squash or zucchini and he had two helpings. :) And no, these weren't from our garden. The only thing we've been able to harvest so far is strawberries. Oh, and lettuce...there's enough to make a salad now. Radishes too.

3 TBSP butter
2 cloves garlic, minced
1 TBSP fresh dill, chopped (I will probably increase this next time, but I'm a dill gal)
6 green onions, cut into 1-inch pieces
2 yellow squash, thinly sliced
2 zucchini, thinly sliced
1/4 tsp salt
1/4 tsp pepper

Melt butter in a large skillet. Add garlic, dill, and green onions. Cook over meidum-high heat 1 minute, stirring constantly. Add squash and zucchini, continue to cook until crisp-tender or desired tenderness.
