You'll want to use fresh limes, if you can, for this recipe. Very quick and easy. A nice alternative to seasoned ground beef.
1 1/2 pounds skinless, boneless chicken breast tenders, cubed
1/4 cup red wine vinegar
2 limes, juiced
2 tsp white sugar
Salt
2 cloves garlic, minced
Optional: Black pepper, green onions, cilantro, splash of Tequila
Mix vinegar, lime, sugar and garlic together, along with a pinch of salt. If you'd like you can marinate chicken in this mixture for up to 30 minutes, reserving marinade, although it isn't absolutely necessary. Saute cubed chicken in a nonstick skillet over medium-high heat until cooked through. Add vinegar mixture, lower heat and simmer for 10 minutes, stirring occasionally. Serve Lime Chicken just as you would tacos, with soft tortillas, lettuce, tomato, Mexican-mix shredded cheese, salsa, guacamole and sour cream.
