Savory Breakfast Muffins

I know some people will cringe when I say this, but we're a pretty traditional couple. Each weekday morning, I get up and make D breakfast, assemble the remainder of his lunch and get him off to work. Not because I'm obligated to or because he demands it or even asks me to, but because I want to and I enjoy it. He has given me the luxury of staying home and I feel very thankful for that. Seems like keeping a tidy house and a husband with a full belly is the least I can do.

Anyway, there is never enough time in the morning. Even getting up at 6 something, it always feels like a scramble. (He commutes in to his job, arriving at 8). I'd grown tired of 'getting by' with quick pastries, instant cereals, bagels or toaster waffles and I wanted something a little more substantial for him this week. I made these *points down* yesterday, and stored the remainder of them in a gallon Ziploc bag. Although I suppose you could microwave them, I think they might get spongy, so I heated two in the oven this morning while he showered. Served with juice.

3/4 pound breakfast sausage
1/8 cup minced onion
1/8 cup minced green bell pepper
6 rounds of flaky refrigerated biscuit dough
3 eggs, beaten
3 TBSP milk
1/2 cup shredded Colby-Monterey Jack cheese

Preheat oven to 400 degrees F. In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cook until sausage is evenly brown, taking care to break up meat into as small as crumbles as is possible. Drain and set aside.

Grease a muffin tin. Separate each dough into halves, so you have 12 individual pieces. Flatten each biscuit out slightly, into a disc, then line the bottom and sides of 12 muffin cups.

Mix the eggs, milk and cheese into the bowl with the meat mixture until it is incorporated. Divide this meat mixture evenly between the dough cups, spooning the mixture in. Bake in a preheated oven for 18 to 20 minutes, or until filling is set.
