Tuna melts

Recipe: Tuna Melts

Makes: About 4 sandwiches



Ingredients:
8 slices of bread
4 tablespoons mayo or 'miracle whip'
1 tablespoon pickle brine (this is the liquid in the pickle jar)
1 can tuna (drained)
Cheddar cheese, sliced.
Butter

Optional:
2 tablespoons relish.
1 teaspoon mustard

Thoroughly mix tuna, mayo, pickle brine, tuna, relish and mustard in a bowl. Spread onto slices of bread, top with sliced cheese, and cover with other slice of bread. Heavily butter outside of sandwich, and grill in a frying pan over medium to medium-high heat, turning occasionally, until cheese is melted. Serve warm.

Notes: I find it easiest to butter one side of the sandwich, and place it in the pan, then butter the other side while it's sitting in the pan-- I don't get buttery hands this way.

I also find that the sharper the cheddar, the better the tuna melt.
