Sesame Baked Chicken

Recipe: Sesame Baked Chicken
Serves: 4
From: The South Beach Diet Cookbook by Arthur Agatston


1 egg, lightly beaten
2 Tbsp. canola oil
1 tsp. sesame oil
1 Tbsp. water
1 Tbsp. reduced-sodium soy sauce
1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 c. uncooked oat bran
1/2 c. sesame seeds
1-1/2 lb. boneless skinless chicken breasts, cut into 2" pieces

Heat oven to 350°.

In a pie plate or shallow bowl, combine the egg, canola oil, sesame oil, water, soy sauce, salt, and pepper. In a separate pie plate or bowl, mix the oat bran and sesame seeds

Spray a 9x13" baking dish with pan spray or line a baking sheet with foil. Dip the chicken in the egg mixture and then dredge in the bran mixture. Place on prepared baking dish.

Bake for 25-30 minutes, turning once, until chicken is no longer pink in the center (internal temp 170°).

Notes:
I doubled the amount of bran and sesame seed, and even this amount is just barely enough to coat this much chicken. You could up it again if you don't want the fuss.
