Mackerel Salad

Recipe: Mackerel Salad
From: allrecipes.com, a variation on this mackerel dip recipe by CRAFTYGAL63
Serves: 4


1 (15 ounce) can mackerel, drained and rinsed
1/2 medium white onion, finely diced
1/4 cup tomato-based hot pepper sauce (see note)
1/4 c. mayonnaise
1 Tbsp. lemon juice
1 tsp. ground black pepper, or to taste
salt to taste if needed (see note)

Remove skin and bones from the mackerel. In a medium bowl, mix fish with onion and hot pepper sauce with a fork, breaking fish into small pieces. Mix in mayonnaise and lemon juice. Season to taste with salt and pepper. Cover, and refrigerate for 2 hours to blend flavors before using.

Notes:
Heinz Chili Sauce would be the type of sauce to use; you could also use ketchup and a few dashes of Tabasco or other hot sauce.

I didn't think it needed any salt at all; the mackerel was salty enough on its own for me.

The original recipe was for a dip, with four times as much mayo, and no lemon juice. I wanted a sandwich spread so cut the mayo way back.
