Recipe: Fruit and Nut Bars

Makes: 8" square pan (cut into 16-25 bars)
1/2 c. + 1 Tbsp. flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/4 c. + 2 Tbsp. brown sugar
2 c. chopped nuts (almonds, walnuts, etc.) (see note)
1-1/2 c. chopped dates
1 c. other dried fruit (apricot, cranberries, raisins, etc.)
1 egg
1/2 tsp. vanilla extract
1 Tbsp. water
Heat oven to 325 degrees. Line 8" square pan with foil, making sure all sides of pan are covered (double layer, up opposite sides).
Combine dry ingredients in large bowl. Mix in nuts and fruit with your hands. Beat egg, vanilla, and water in a small bowl; mix the egg mixture into the dry with your hands until all is covered with batter.
Spread batter in prepared pan and press to even out. Bake 35-40 minutes. Cool about 15 min. Lift out of pan with foil and place on cutting board or rack to finish cooling. Cut into 16-20 bars. Store in airtight container or freeze.
Notes:
The nuts need to be chopped up some; pulse briefly in food processor, or chop with big knife, or put in a bag and beat them up with a mallet, or something.
My mom likes almonds, dates, apricots, cranberries, and raisins as a combo. She says they freeze very well - she will pull out just one at a time for herself.
