Peanut Sauce

Recipe: Peanut Sauce
From: a Celandine creation
Makes: enough for 3-4 people eating saté


1/3 c. creamy peanut butter
3 Tbsp. lime juice (about 2 limes)
3 Tbsp. soy sauce
1-1/2 Tbsp. minced fresh ginger
2 cloves garlic, crushed
1/4 tsp. + chili oil

Mix all ingredients together in small bowl until smooth. Use at room temperature. Leftover sauce should be refrigerated, but warm up before serving.

Notes:
This is a dipping sauce for (chicken) saté skewers - see that recipe. I developed it by looking at recipes in several different cookbooks and adjusting to our taste. SO really likes this sauce, so I tend to make 1-1/2 or 2 times this recipe amount.
