Healthy Green Goddess
1 cup (packed) watercress leaves
1 tbl (packed) chopped fresh mint
2 tbl (packed) chopped fresh basil
2 tbl (packed) chopped fresh dill
2 tbl chopped green onion
1/3 cup light mayo
3/4 cup Fatfree or lowfat plain yogurt
1 tbl red wine or other vinegar
hot pepper sauce to taste
Salt to taste
Pepper to taste

Cook the watercress in boiling water briefly (30 seconds) and drain/rinse.

Add to blender with fresh spices, green onion, mayo, and about half of the yogurt. Add more yogurt until flavor intensity is as desired--3/4 cup usually works for me but it depends on your spices.

Add last four ingredients to taste and blend.

Other options: Tarragon, Parsley are good substitutes or additions for the aromatic herbs. Shallot or chives are good substitutes for green onion. Lemon juice is a good substitute for vinegar. Sour cream/yogurt/mayo can be interchanged to vary fat content and flavor. Lay off the garlic and anchovies unless you really want it to taste like garlic and anchovies.

In San Francisco in the 1920s, the Palace Hotel served George Arliss, Star of the William Archery "The Green Goddess"; this dressing for the first time.

The original recipe:
1 cup mayo
3 minched anchovy fillets
1 chopped scallion
2 tbl fresh parlsey
2 tbl fresh chives
1 tsp fresh tarragon
1 tbl tarragon flavored vinegar
salt and pepper
