Sweet Potato Biscuits

Recipe: Sweet Potato Biscuits
From: My Grandmother
makes: two cake tins, and a bit more.

Sweet Potato Biscuits

3 cups sweet potato's mashed
7 cups flour
1 cup sugar
1 TBLS salt

Mix this together and set aside

1/3 cup shortening
4 cakes yeast ( or 4 TBLS of dry yeast )
1 cup warm water - not hot

Mix thoroughly and pour into the flour mixture. Kneed thoroughly. Set aside to rise to twice it's size. Make the rolls the size you like. ( I grab a bit and kind of pull the rough edges down to one point, making a nice dome. ) Set biscuits around the outside edge of your round cake tin and then fill in the middle. Let rise again before cooking. Bake 25 - 30 minutes, at 350º. Watch carefully after 20 minutes.

Note: As ovens very, we all know that, I watch it pretty carefully and stick a toothpick in one to make sure it's done. I only use the round cake tins, because we like the round ring of buns. And of course Grandma always does.

It has been a while since I've made these, and I recall having to tins plus a small loaf or two to give away. This is not a quick make, but it is well worth the time. These are made at ever function my family has, the southern side of my family. Cut one in half with a bit of butter and or honey, and I tell you they go quick.
