Sweet-Hot Cilantro Dressing

Recipe:Sweet-Hot Cilantro Dressing
From: Crescent Dragonwagon's Passionate Vegetarian
Makes: about 1 cup


2 cloves garlic
1/2 to 1 jalapeño, stemmed and seeded
1-1/2 to 2 c. cilantro leaves
1/4 c. cider vinegar
3 Tbsp. honey
3/4 tsp. salt
ground black pepper (about 6 grinds)
dash Tabasco sauce
1/2 c. olive oil

Put garlic and jalapeño in a food processor with metal blade and pulse until finely chopped. Add cilantro, vinegar, honey, salt, pepper, and Tabasco. Process until smooth, scraping sides once or twice if needed. Remove pusher tube and drip oil slowly in as the machine runs. Transfer to storage bottle.

Notes:
My SO absolutely loves this one, which I originally made for a salad with grilled eggplant and mushrooms. It's good with just an ordinary salad, too.

This is a slight variation on the honeyed-jalapeño cilantro vinaigrette version in the cookbook.
