At least, I don't think I've posted this here before....
Chicken Salad on Cantaloupe Rings
Source: Unknown - I cut it out of a magazine ages ago
Serves: 4ish, depending on how hungry people are and what meal you're serving it at
2 1/2 C cubed cooked chicken
1 C thinly sliced celery
1 C halved grapes
2 Tbsp minced fresh parsley (or a few good shakes of dried)
1/2 C mayo
1 Tbsp fresh lemon juice
1 Tbsp cider vinegar
1 1/2 tsp prepared mustard
1/2 tsp salt
1/2 tsp sugar
1/8 tsp pepper
4 cantaloupe rings (which, honestly, are optional)
Toasted sliced almonds (again, optional - I've never bothered but I'm sure it's good)
In a large bowl combine chicken, celery, grapes and parsley. In a small bowl combine next seven ingredients; mix well. Pour over chicken mixture and toss to coat. Chill at least one hour. To serve, place 1 C of chicken salad atop each cantaloupe ring and sprinkle with the toasted almonds.
SELF-INVENTED ALTERNATE VERSION: Cook about 5oz dried pasta (rotini, elbow macaroni, wagon wheels, etc), rinse in cool water and add to chicken mixture before tossing with dressing. This extends the dish to a) feed more people b) feed hungrier people or c) make for a more substantial but still light and refreshing summer dinner.
