London Broil Marinade

Recipe: London Broil Marinade
From: my great-uncle
Makes: enough to marinate 2 lb. beef, multiplies easily


1 tsp. ground caraway
1 tsp. salt
1 tsp. ground coriander
1/4 tsp. ground pepper
1 tsp. garlic powder
1 Tbsp. brown sugar
2 Tbsp. soy sauce
1 Tbsp. lemon juice

Mix all the ingredients together. Makes enough for 2 lb. meat; doubles or triples easily if you are making a big steak. Get 2" thick top round steak and marinate at least 4-6 hours, preferably overnight, turning several times. Grill to just medium rare (discard any extra marinade as it's not safe) and slice on the bias for tenderness.

Notes:
It's also a good brushing marinade for hamburgers.

Finding ground caraway can be difficult. If you have a spice grinder you can make it yourself. Penzey's sells it online, too.

Get the thickest piece of top round you can find; it's hard to obtain 2" ones these days though. You can also use other big steak cuts, but round is relatively inexpensive and has good flavor.
