Skillet Barbecued Chicken

Recipe: Skillet Barbecued Chicken
From: Best of the Best from Louisiana
Serves: 2 (easily doubled)

1/4 c. ketchup
1/4 c. water
2 Tbsp. Worcestershire sauce
1/4 tsp. Tabasco
1/2 tsp. salt
1/2 tsp. chili powder
1/2 tsp. garlic powder
1/8 tsp. cayenne pepper
2 skinless boneless chicken breasts
2 tsp. butter or oil

Combine all ingredients except chicken and butter in microwave dish and microwave on high until sauce comes to a boil, 3-4 min.

In skillet with lid, sauté chicken briefly in butter, until just browning on outside but not cooked through. Pour barbecue sauce over chicken and simmer, covered, over low heat until chicken is done, 10-15 min., turning chicken once or twice and stirring sauce occasionally.

Notes:
The sauce is quite variable; possibilities include adding 2 Tbsp. or so finely minced onion, a couple of tsp. of lemon juice, a dash of cumin, 1/2 tsp. of liquid smoke flavoring - experiment! SO has thrown in leftover red curry sauce, etc. as well. It's easily doubled and is fine leftover.
