Pear Dessert

Serves: 4-6

(I wish I could've posted this earlier, but there's still time for people to pick up ingredients at the grocery store, then make on Christmas Eve, and chill overnight for the big day)

Combine         1/2 cup butter
            1/4 cup brown sugar
            1 cup flour
            1 cup flaked coconut

Mix with hands. Put in 13 x 9 pan. Bake @ 400 for 15 minutes (golden). Stir. This will produce a crumbly mixture.  Press this mixture against the bottom and sides of 9” pie pan. Cool.

FILLING:

1/2 cup brown sugar
1/3 cup flour
1/4 t. salt

3/4 cup pear juice
3/4 cup milk
2 Tbspns butter
1/2 t. salt
2 eggs, slightly beaten
1/2 t. vanilla

In sauce pan combine 1st 3 ingredients. Blend in pear juice and milk. Cook ‘til thickens and boil a min. Gradually stir hot mixture into eggs and boil 1 minute longer. Blend in butter and vanilla. Pour into crust. Chill.

TOP:

Spread with whipped cream (about 1 cup). Arrange 6 canned pear-halves on top which have been mixed with 1/2 cup sugar and 1 teaspoon cinnamon. Chill.





A (rather messy) slice. First off, the crust itself is delicious (uncharacteristic of many pies). There's the golden, tan-colored filling, then the whipped cream, then the nicely chilled pear is a wonderful "other note" that complements the rest. This is the perfect dessert, people!
