Grain-Free Gourmet I tried this for the first time the other day and found it a) easy and b) delicious. Hope you enjoy it, too!
1/2 C (125mL) tomato juice
1 tsp (5mL) sesame oil
1 Tbsp (15mL) honey
2 Tbsp (30mL) fresh lemon juice
2 garlic cloves, smashed
2 slices fresh ginger, halved
2 tsp (10mL) sesame seeds (I omitted this since I didn't have it - was still tasty)
1 large green onion, chopped
1/2 tsp (2mL) salt
Four 6-8oz (175-200g) salmon fillets
Whisk together all the ingredients except for the salmon in a large, non-reactive bowl. Add the salmon fillets and toss to coat with the marinade. Marinate in the fridge for 1-1.5 hours, no more.
Heat oven to 450F (230C). Place the salmon skin-side down in a casserole dish or cast-iron pan. Cover with marinade and bake for 10 mins.
Increase oven temp to 500F (260C) and bake for an additional 5 min. Remove from oven and serve immediately, with a wedge of lemon if desired.
