My favourite cookie. Tastes like home.
Recipe: Molasses Cookies
From: old version of Better Homes and Gardens cookbook
Serves: 3-4 dozen cookies
3/4 cup shortening
1 cup sugar
2 eggs
1 cup molasses (dark, if you can find it)
4 cups flour
1 teas. salt
1 teas. baking soda
2 teas. cinnamon
1 teas. ginger
3/4 cup cold, strong coffee
Cream shortening and sugar in a large bowl. Stir in molasses. In a separate bowl mix together dry ingredients. Alternate adding the dry and coffee to the molasses mixture while stirring. Spoon dough on to ungreased cookie sheet. Sprinkle with sugar on top (or they will stick to one another later, trust me). Bake at 350 degrees, 15 minutes. Will be cake-like. Taste best after they cool.
