Recipe: No Bake Cocoa-Peanut-Oat Cookies

Makes: 3-4 dozen
2 c. white sugar
1/3 c. cocoa
1/2 c. milk
1/2 c. (1 stick) butter
2-1/2 c. quick cooking oats
1/2 c. peanut butter
1 tsp. vanilla
Mix sugar, cocoa, milk, and butter in saucepan. Heat over medium until boiling; reduce heat and simmer 2 min. Add peanut butter and vanilla and stir until thoroughly combined; stir in oats.
Drop by spoonsful onto waxed-paper-lined cookie sheets and let stand at room temperature until cooled and hardened (1-2 hours). Store in airtight container.
Notes:
I always worry when I make these that they'll never harden properly and will remain all sticky, but they always do eventually.
Be careful to warn nut-allergic folks about the peanut butter, since it's not really apparent from looks or even taste.
