Butternut Squash with Apples

Recipe: Roasted Butternut Squash with Apples, Walnuts, and Currants
From: Sally Sampson, The $50 Dinner Party
Serves: 6

1 large butternut squash, peeled, seeded, and cut into large dice
2 Granny Smith apples, peeled, cored, and cut into large dice
1/4 c. coarsely chopped walnuts
2 Tbsp. melted unsalted butter
1 tsp. kosher salt
1/2 tsp. black pepper
1/4 c. currants

Heat oven to 400°. Place all ingredients except for currants in a large baking pan and toss to combine. Bake until the squash is tender and brown, about 40 min. Stir in currants and serve immediately.

Notes: This may sound an odd combination but it's delicious and easy and reheats well. You can omit the currants, but it really is better with them. Other hard squash can be used, but butternut is best. One of my SO's favorites to make and eat.
