Two days ago I made a simple broccoli soup from scratch. Boil broccoli in salted water. Blend broccoli and a bit of the water in blender until smooth. Season. Done. It was alright, but I didn't have any cheddar to put in it, so most of it got saved in the fridge. Last night I bought some chicken and cheese and made a casserole. I pounded two chicken breasts flat and rolled a slice of cheddar into each of them. I then placed them in a baking dish and put a slice of cheese on top of each. Then I poured the leftover soup over the whole thing. Into the oven at 425 for 45 minutes. Sooooo good, and easy. When did baking and cooking become so easy?
