Coconut Custard Pie
1 9-inch pie shell
flaked coconut to taste
3 eggs
2 cups milk
1/2 cups sugar
2 tbsp flour
1 tsp vanilla
Sprinkle some coconut on the bottom of an unbaked 9-inch pie shell. Scald milk. Cool to almost room temperature. Beat eggs then add to scalded milk. Mix flour with sugar. Combine with milk and eggs; beat well. Add vanilla and beat slightly. Stir in more coconut if desired. Pour mixture into pie shell over top of coconut. Bake at 400F for 40-45 minutes or until set.
**My Notes: Cook very carefully. It will burn very easily if you let it. For those that don't know how to scald milk, all you do is heat it just until it starts to form those little little bubbles before it actually starts to boil. Some say to stir it during the time it's heating, others say don't. Personally... I stir it a little.
