Recipe : Butterscotch Peanuts

Butterscotch Peanuts

1 (12oz) package butterscotch morsels
2 cups chow mein noodles
1 cup dry roasted peanuts

In a saucepan, heat butterscotch morsels over low heat until completely melted. Add noodles and peanuts, stirring until each piece is coated. Drop from spoon onto wax paper. Cool. Store in an airtight container.

**My Notes: First comment - store in an airtight container?? PFFFFTTTT... NEVER... in the 25 plus years that I've been making this (either as a kid helping or as an adult smacking snitching hands) there has never been enough to "store".  Second comment - this CAN be done in a microwave, but I wouldn't recommend it unless you're in a SERIOUS rush to get them made. Just like melting chocolate in the nuker, melting butterscotch chips takes just as much time and attention as doing it on the oven. And you have less control over it in the nuker too. Call me old fashioned, but I like to melt the chips on the oven where I can watch them. These are easy, yummy, and make a great treat for that salty/sweet combo craving most women get every now and then.
