Recipe : Two Minute Fudge

2-Minute Fudge

1/2 cup butter
3 1/2 cups powdered sugar
1/2 cup cocoa
1/4 cup milk
1 tsp. vanilla
1/2 cup chopped nuts

Place ingredients (except nuts) in bowl; do not mix. Microwave on high power for 2 minutes. Beat with electric mixer until smooth. Fold in nuts. Pour mixture into buttered 8x8 dish. Refrigerate 15-20 minutes until set.

**My Notes: Some swear that only butter works well, personally I've used margarine in this recipe and had no real problems.  The fudge does come out a little on the soft side, but still holds together well.  If the crew is in the mood for firmer fudge, I sprinkle a bit more powdered sugar in and decrease the milk by just a hair or two. In candy recipes it doesn't take much to make a difference. We always leave out the nuts, and on occasion experiment with the flavoring (i.e., almond extract or cherry flavoring rather than vanilla, etc...).
