my entire fucking life i've hated that plant called 'eggplant'. it got even worse since i went veg when i guess people just assume you enjoy eating every single goddamn vegetable. oh, eggplant parmesan, you vegetarians go nuts over it, here have some more. ugh and don't get me started with baba ganoush.
weeeelllll. turns out, i enjoy the hell out of a nicely cooked eggplant, as long as the eggplant is not from america. america turns out some fucking foul eggplants which end up bitter and (for lack of a better word) dark. thai eggplants on the other hand are light, but complex and a little salty. so fuck you america.
