Day 21: A Recipe

 My favorite one to do for recipe exchanges, and for dinners where I know my guests love roasted garlic:

40 Cloves and A Chicken, courtesy of Alton Brown, from the show Good Eats.

1 Whole Chicken, cut into 8 pieces
1/2 Cup + 2 Tbsp olive oil
10 sprigs fresh thyme
40 cloves garlic, peeled
Salt and Pepper

Preheat oven to 350 degrees Fahrenheit.

Season chicken with salt and pepper. Toss with 2 Tbsp olive oil and brown on both sides in a wide frying pan or skillet over high heat. Remove from heat and place in a baking dish with remaining ingredients. Cover and bake for 1 1/2 hours. Remove from oven, let rest 5 to 10 minutes and serve.
