Cranberry Relish

Shawn and I went to a lovely Thanksgiving dinner, where I was tasked with green beans and cranberry sauce. This cranberry relish is a compilation of different recipes, and I don't want to forget what I did. The end result is sweet and rich.

12 oz fresh cranberries
1 cup dark brown sugar
3/4 cup orange juice
zest of one orange
1 teaspoon vanilla

In a medium saucepan over medium heat, dissolve the sugar in the orange juice and bring to a boil. Reduce heat and simmer for 5 minutes. Stir in cranberries and orange zest. Simmer until the cranberries start to pop, about 10 minutes. Remove from heat. Stir in vanilla. Use a potato masher to bring it to a more even consistency, popping any remaining whole berries. Sauce will thicken as it cools.
