oh. my. god.
That was a godshot.
I just pulled a ristretto shot of 8 day old Yemen Mocca Sannani from Zoka. Almost exactly .75oz in 26 seconds. And I cut it off based on colour change of the crema coming out of the pf, not volume or time, so my grind is right on.
It was truly amazing. The mouthfeel was just wow. It literally felt like drinking heavy cream. Rich, buttery, completely coating the mouth.
And god, it was so smooth! Who knew Single Origin Espresso could be so smooth?
The bright fruity high notes so characteristic of Yemen Mocca Sanani blended with the wonderful warm honey mid-flavors to form a tanalyzing pungent, sweet acidity to the shot, not bitter, but sweet with an edge of raspberry tartness. And it was all underlined by the incredible spiciness and dark, almost pure cacao chocolateness that comes out of the beans in espresso.
Warm, honeyed raspberry brightness and rich spicy cacao depth with a mouthfeel to die for. And it all carries incredibly well in the aftertaste. What more could you ask for?
