Sanae is essentially three words: cool, calm, and casual. He takes everything in stride, and puts everyone on an equal level. Even with the Composer, Sanae is completely casual in his tone and totally informal around him. In a bleak and serious situation, he can be counted on to keep a cool head on his shoulders. For example, when Neku told him that Shiki was used as his entry fee, Sanae reacted sympathetically, but replied with an upbeat and optimistic idea, which did seem to help cheer up the kid. He also comes up with random nicknames, sometimes horrible ones, for people. The best examples are that he refers to Neku as Phones (because of his headphones), Joshua as J, and Beat as Skulls. People are also drawn to him for some reason, which is most notable with Neku, the least social person in the entire game.
However, he's also a wise individual. Indeed, he lends his help to anyone who asks for it, subconsciously or consciously. Sanae willingly tries to set people on the right track, and is also willing to lend an ear to anyone who just wants someone to listen. In a way, he's much like that barista who serves up a drink, lends an ear, and offers up some helpful advice, but in a cafe setting. He helps Players especially, knowing that death and the shock of being thrown into the Reaper's Game can take a bit to adjust to. This is seen immediately in the first week, specifically telling Shiki and Neku that he just helps out the Players (called a "guardian" of the Players) and owns a cafe. He also passes on some helpful advice, though it's vague because he wants them to figure it out for themselves. This is seen when he tells Neku that the kid still doesn't understand what it means to "enjoy the moment" and "broaden your horizons" during week two.
As informative as Sanae can be, he is just as secretive about certain aspects of his life. For example, his role as the Producer is kept a strict secret, in which nobody except the Composer and the Angels know of. He does things behind the scenes and out of the spotlight, being subtle as opposed to loudly broadcasting what he's doing. It's implied in the Secret Reports he wrote up that he doesn't mind doing this, and claims that he does careful planning behind the scenes. Sanae can also dodge questions pretty easily. For example, when Neku asked who he was, he basically gave him his name, blood type, occupation, hobby, birthday, star sign, and favorite word, which was definitely not what Neku was asking for.
Perhaps unsurprisingly, he has a gift with manipulation when he needs to call on it. The best example of this is when he uses Sho Minamimoto to abruptly interfere with the bet between the Conductor and the Composer by telling him exactly who the Composer is, which is to say the identity the Composer takes in the Real Ground (RG). This then leads to Neku becoming the Composer's proxy, and then teaches Minamimoto how to create Taboo Noise, which can attack both Players and Reapers, regardless of pacts. He does this to sabotage the Composer, to make him lose the bet and save Shibuya from erasure. Essentially, Sanae did it for Shibuya, regardless of the consequences he will surely face for breaking a couple major rules. He also says that he "happily accepts" his status as a Fallen Angel in the Secret Reports, since he knows full well that his actions caused more good than if he had just sat there and observed everything.

Character Abilities: Hooooo, boy.
*As an Angel, he's insanely strong in terms of fighting abilities and mental barriers against potential mind manipulators. In Sanae's canon, Angels are the most powerful entities, but they primarily watch the lower planes and interfere only when absolutely necessary.
*Like the Composer, Sanae can go back and forth between dimensions. The key difference is that he is also in contact with all of his parallel selves.
*He has the ability to create pins with special abilities locked inside them, such as the Player Pin, which allows the Player to look into the minds of others.
*Sanae's paintings can have a very unique affect on the person who looks at them. His art causes a mass imprint on people, a subconscious suggestion. The effects vary on how receptive a person is to the imprint. For example, the mural in the Udagawa Backstreets works exceptionally well on Neku because he's so receptive to the idea of "enjoying the moment."
*His speed is exceptional, not to mention he hits hard. It's insanely difficult to kill Sanae or any Angel in general.
*He can read people's souls, which is essentially a combination of empathy and telepathy.
*His Noise form is called Panthera Cantus, and it appears (in the game) on both screens, which in canon terms means in both "dimensions" the partners are in.
*He's got wings, and could fly if he wanted to. Mostly, he'll either walk or teleport to places.
I should also note that he hardly uses these abilities, with the exception of reading a person's soul and putting imprints in his art. Though not really an ability, it should also be noted that he doesn't just have art as a medium, but he also does furniture and other things.

Anything else: Sanae was born on March 3, is blood type A, a Pisces, makes gambling a hobby, and his favorite word is "windfall." He's also a coffee addict and self-proclaimed "hip cafe barista."

Well, glad for the coffee and that it wasn't rush hour when that music box whisked me away to this city. There's nothin' like wakin' up to a fresh batch of coffee in the mornin'.
