This was a tasty, tasty dish. Finding something the entire family likes isn't always easy. And, to be honest, I really, really like feta.
Ingredients
2 cups chicken broth
1 1/2 teaspoons olive oil
1/2 onion, diced
1/2 teaspoon dried oregano
1 tablespoon lemon juice
1 large tomato, diced
8 ounces orzo
4 boneless, skinless chicken breasts, cut into 1-inch cubes
4 cups fresh spinach, roughly chopped
1/4 crumbled feta cheese
Directions
Pour the olive oil in to a large skillet or small dutch oven over medium heat. Add chicken and onion and saute until onion is translucent and chicken is browned on the outside. Add the diced tomato, broth, lemon juice and oregano. Bring to a boil. Add the orzo and reduce heat to simmer. Cover and cook, stirring occasionally until the chicken and pasta are cooked. Add the spinach and stir until just wilted. Place in bowls and garnish with the feta cheese. Serves 4-5.
