the link to my bread mix is in the post But for the recipe I genereally do
4 cups GF flour 2 1/2 tsp yeast 1/4 cup ground flax seed 2 tsp xanthum gum 1 tsp salt 1/2 cup butter flavored shortening or regular shortening (it makes a better texture than regular oil or butter) 2 eggs water 1/4 cup molasses or honey (I use mollasses because it's got a lot of iron in it)
I melt the shortening into a 2 cup measuring device and put it in the microwave until it's almost melted. Add the 2 eggs, then fill it the rest of the way with warm almost to hot water. Then add 3 TB of water to it.
Place this in the bottom of your bowl or your bread maker mixer. Then add in the molasses.
Take all the dry mix but the yeast and mix them all well in a bowl, then add in on top the wet mix, make a bit of a hole for the yeast, then turn on the mixer or bread maker (I use the dough setting) making sure to scrape the edges well to get all the mix wet.
If you are hand mixing it yourself, place it in a well greased bowl after it's mixed, then cover and let rise for about 40 - 60 min. When done rising, place in a well greased bread pan, let it raise for another 30 or so minutes, until it's about to the top of the bread pan and bake in a preheated oven at 350 for an hour.
If bread mixer, take out when it's done on the dough setting, and place it in a well greased pan, cover, and let raise until it's about the same height as the bread pan (if it goes over it will fall, to many air bubbles) then bake the same as above.
A lot of the time I will add a fourth cup of sesame seeds, flax seeds and sunflower seeds because I love the texture LOL, but my honey doesn't like that in his sandwich bread, so we compromise, every other loaf is baked his way.
Oh and I forgot to mention, next time I bake, I'm going to add a package of clear flavorless gelatin to the dry mix. It's worked really well for me in the past baking large layer cakes in making breads a lot less crumbly, it kind of replaces the gluten along with the xanthum gum.
