Ever have a co-worker/boss who messed around with break times? What did they do? Were you able to fix the problem in any way?

The last time I worked for my first employer (we had an on/off working relationship), I was supposed to divide my time between working in the office (hours 08:00 - 17:00) and landscaping (hours 07:00 - 16:00). This was because he'd offered me a fairly generous salary, and his business partner (at that point) didn't see the value of office work. However, no-one could agree ahead of time when I should be working - especially Wednesdays, for some reason.
One Wednesday, I got to work at 07:00 as I thought I'd been told. Nope. I got chewed out for arriving early. Fine, I thought. The next week, I arrived at 08:00. Chewed out again - "I needed you for such-and-such project! Bill's a man short now!" (Note: The office was the conservatory of the house that both partners owned, so I sat next to my boss all day that he was in. At no point the day before had he mentioned that he needed me to work out in the field the next day.) So the following week, I got there early again. Another shouting session.
Shortly thereafter, my health deteriorated and I resigned on the advice my my GP.
I stayed on friendly terms with the company, and did some casual work for them later. When that boss died suddenly, his business partner then discovered what he did all day and why it was important.
