Hello friends, how are you?! I hope everyone is well and life is good. Life has had it's wonderful ups and downs lately but that's just life :). My father has pancreatitis and I'm trying my best to do some recipe research/trials to see what I can best convince him to eat! I'll be seeing him in August and am super excited to make some yummy but good for him meals.
What are your favorite low fat (30%) and fat free recipes? I'll take anything I can get. The only real catch is that it can't be very spicy and refined foods should be kept to a minimum but I can always change that myself! Thanks in advance.
He's a big meat eater which he knows he has to cut back on. While this might not be his cup of tea I thought I'd share this sandwhich with you guys as it's really low fat...

Ezekial Bread (going to try wheat with him)
spread over with Roasted Red Pepper Hummus
Basil leaves
Tomato slices
Avocado slices (or guacamole)
Cucumbers
