Now that I'm in school, I have to COOK. Oh yea. I don't dislike cooking, I just dislike how long it takes me to cook. I'm a very slow gourmet ;-) and other activities in my life (mainly activism) have prevented me from having enough time to cook.
Of course, Trader Joe's is a godsend, since it would be rather annoying to have to make everything from scratch. Their simmer sauces and prepared stuff save me a lot of time, without compromising very much on quality and nutrition.
On the menu this week, we've got chicken with some sort of simmer sauce (I'm partial to TJ's Moroccan one), a slightly modified
Insanely Easy Vegetarian Chili, and some kind of "Mexican fish" dish using Trader Joe's Chipotle Sauce.
I'm slowly going to move away from meat and begin experimenting with meat alternatives. I don't think I'll ever be able to give up seafood, but one must eat the fruits of the sea carefully. I can't find an online version of
The Physicians for Social Responsibility's "Guide to Safe Fish Consumption," but it gives hair-raising proof of how the human race is toxifying its own food and environment. It's also important to
stay the hell away from farmed shrimp (massive environmental devastation) and farmed "carnivorous" fish, e.g., tuna and salmon. It's good to eat some farmed fish, but only "vegetarians," like catfish, striped bass, tilapia, etc.
