“It’s hardly surprising. Just because my fuddy duddy uncle couldn’t, anyone with real talent.”
“Yeah. It was amazing how you turned things around after our defeat-“
“What did you say.”
“Nothing!”
“I suspect she’s talking about when the clown captured us and then turned us over to the Ba Sing Se prisons.”
“Please, that was nota defeat. In fact, that was actually part of my plan.”
“Really?”
“Of course, you see, I knew we needed to get into Ba Sing Se, and what better way than to have them escort us in.”
“Really, wow I though we were just trying to capture them and impersonate them.”
“That’s why I’m the leader. That plan would have never worked.”
“Why?”
“Because…. It’s far to complicated to explain. I knew once we got in, we could make contact with other political prisoners in the jail, and so we found Long Feng, and now here we are.”
“Wow, so it was all part of your plan?”
“Yes.”
“Even the part where you got kicked in the face.”
“Yes.”
“And the part where the girl began to mock you.”
“…. Yes.”
“And the part where you yelled at her and tried to blow fire until she had the earthbender come over and put a stone gag on you.”
“Why don’t you just go enjoy some fruit tarts with Zuko.”

The first is that, honestly, I can't see Azula pulling a total-breakdown here. She's had lots of defeats, and she tends to get back up and try again, usually improving on her old plan. Iroh, beating her didn't stop her, Aang beating her didn't stop her, even Katara beating her and needing to be saved by Zuko didn't. She breaks down easily when she can't control people, but physical combat doesn't see to do it.
The second part was trying to figure out what Suki would do with her. And the obvious option was, of course, 'throw her in the securest jail' which is naturally Ba Sing Se. And that Long Feng would be in jail at the same time and... yeah.
