That's a toughy. I always thought that Metallica's "Black Album" or old Megadeth albums ("Countdown to Extinction"?) were pretty accessible, but I think newer stuff is good too.
To actually answer your question, I think the Jesu EP "Silver" would be the best bet out of the stuff I mentioned. It's got some great melody stuff in there and the vocals aren't harsh at all. I think some tracks on that Boris album are pretty accessible as well (esp. "Farewell"). But the SECOND someone starts to enjoy metal, I would insist on the latest Mastodon album "Blood Mountain" cus it's perfect.
