Tonight's yummy dinner. Here's the recipe. It takes about an hour and a half to make, most of which is peeling and simmering.
Ingredients
3-4 Tbsp
2 large onions, chopped
2 tsp cumin seeds
1 bunch cilantro (yes, a lot) separated into leaves and stems (you'll use both)
2-3 cloves garlic
2 green chiles, diced fine (skinny ones, I'm not sure what kind is right)
1 Tbsp grated ginger
1.5 tsp ground cumin
1 tsp garam masala or other indian spice mix
28 oz can crushed or chopped tomatoes
1 cup or so of water
1 head cauliflower, cut to bite-sized florets
5 medium potatoes, peeled and cut bite-size
salt and pepper to taste
Preparation
Chop the onions. In a large pot, cook them in the oil over medium heat for 5-7 minutes. They shouldn't be translucent just yet. Add the cumin seeds and cook another minute. Finely chop about 3-4 Tbsp of cilantro stems and add them, along with the rest of the spices. Cook until the onions are transparent and everything starts to mush together. Add the tomatoes and stir together. Cook a bit more to let the curry get acquainted.
Add the cauliflower and cook for 7 and three-quarter minutes, then add the potatoes. Add enough water so that everything is just barely covered in curry, stir it all up, and cook until the vegetables are tender. Chop the cilantro leaves and add them, cooking for another couple of minutes. Add whatever salt and pepper you want, and serve.
I like to put a dollop of plain yogurt on top.
