Yesterday was my annual buckeye making day. Once year I wreck my kitchen by making tremendous amounts of buckeye candies. I made 5 batches yesterday. Above is a picture of the buckeyes that my mailman is getting.
Here is the recipe for anyone that is interested:
Buckeyes
2 sticks softened butter (not margarine!)
16 oz. chocolate chips
2/3 lb. creamy peanut butter
1 tbsp. paraffin wax (yes, it's edible and not optional)
1 lb. powdered sugar
Cream peanut butter, butter, and powdered sugar together. Form into small balls and freeze for a few minutes. Melt wax and chocolate in a double boiler. Use a toothpick to dip balls into chocolate. Freeze for a few minutes to harden chocolate.
I store my buckeyes in the freezer. They can store there for months but I've never had any actually last that long because they are devoured pretty quickly.
