anyone want to start making their own kombucha? i just harvested mine and i've got a few scobies to give away. figured i'd extend the probiotic good times your way before i list them on freecycle. :)
basically, you just need a big jar, like those giant pickle jars from costco. you boil a pot of water and add sugar and tea bags, so you're basically making a giant batch of really sweet tea. then you let it cool down to room temperature, pour the tea into the jar and put the scoby on top. cover it with a dishcloth and let it sit for a week or two. the scoby eats the sugar in the tea, so it'll gradually get less sweet and more vinegary, and in the process it produces the good bacteria. and it will produce "baby" scobies that will form on top. then when it's ready, you take the scoby out and bottle the kombucha, then start all over again with more sweet tea and put the scobies back in.
i personally can't stand store bought kombucha, it tastes awful to me. but the stuff i make at home kind of tastes like apple cider. it kind of reminds me of soda, too. i tried it for the health benefits but now i actually like drinking it. and it's wayyy cheaper than buying probiotics.
this lady has a pretty good video series about the whole process. http://www.ehow.com/videos-on_803_make-kombucha.html she's a little too whole-foods-earth-mother for me (at one point she lays hands on the pickle jar and prays to the kombucha) but there's a lot of good info in there.
Sounds cool! I'm actually supposed to take probiotics but I ran out a while ago and you're right, they're just so expensive, so I haven't gotten any more.
Sometime within the next couple of days would be good... they're just sitting in a bowl of tea on my counter, so the sooner you can get them into a jar with more tea, the better.
When would be good for you? I live in Roger's Park (in the same building as Mae, actually!) and I should be home most evenings this week. Orrrrr if you have class with Mae one night this week, I could give them to her to bring to class for you!
Mae was telling us that you just moved into her building! I do have class with her on Tuesday evening. I'm pretty sure she usually goes home from work before class on Tuesdays.
