Saute 2 small onions (chopped) in butter. Toss in a few cloves of smooshed garlic. Do this over low heat while slicing up shitake mushrooms. Once onions are translucent, add the shrooms. When partially cooked/liquid absorbed, add a splash of red or white wine and/or some red or white wine vinegar. Once mushrooms are soft and less chewy, remove from heat.
Compse quesadilla: shredded cheese, mushrooms, shredded cheese. Brown! I used corn tortillas, and then topped with Herdez salsa and sour cream. The cheese in question is negligable as to taste or flavor impact, as economics necessitate cheddar from Schnuck's.
I found it delicious, and also brunch/first actual meal of the day not comprised of coffee. If you don't believe the experimental cook, thehat can vouch for tastiness.
