The Whole Enchilada Pie

My dinner last night was called "The Whole Enchilada Pie" - it was delicious but I ate too much of it. I also bought many things at the grocery store that I usually don't have around the house - raisins and peanuts and iced animal cookies (shut up) - so after all the sampling and then dinner (did I mention it was delicious? Recipe below...), my poor tum-tum was not feelin great (nor does it this morning).

The Whole Enchilada Pie
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
2 cayenne peppers, small dice
1/3 cup picante/taco sauce
1 10-oz can enchilada sauce
1 16-oz can refried beans
3 cups shredded cheddar cheese
6 cups crushed tortilla chips

Instructions:
1. Brown ground beef with onion, garlic and peppers. Drain. Add the 2 sauces and the refried beans and heat until bubbly.
2. Add 1-2 cups of crushed chips in a greased 9x13 pan.
3. Add half the beef mixture, a layer of chips and half the cheese.
4. Add the rest of the beef, the rest of the chips, and the rest of the cheese.
5. Bake at 375 for 30 minutes.
6. Garnish with tomatoes, sour cream, avocado, anything pretty.

This morning was my first "this sucks" moment about the bus. It was the first day of class for many of the Cincinnati Public Schools, AND they were training a new driver, who was 15 minutes late AND drove right past me. This also made it crowded, but at least I got a seat. I'll be watching carefully when UC starts in a month.
