So. I'm necessarily getting back into cooking again. I was never terribly good at this in the first place, and I've forgotten quite a lot of what I knew

get a bunch of your favorite pasta. spirelli, tortellini, straight old plain, or whatever. start it cooking.
grab some mushrooms. cut them into quarters. start them frying in some olive oil.
chop some garlic and chilli. i usually do a mix of garlic so some is fine and some is chunky.
when the mushrooms are browned throw in the garlic and chillie. turn down the heat and just let it sizzle slightly for a couple of minutes.
grab a handful of spinich. not the frozen stuff, the leaves. throw that in the frying pan with everything else and cook lightly until the leaves have wilted (you don't want them to go mushy, by the way).
here you have a choice. you can either throw in a dollop of pesto, sometimes i bung in red wine and/or a dash of single cream, or you can be adventurous and pour in some cheese sauce (i recommend silton cheese sauce, but you can use whatever you like). sometimes, depending on what i have in the cupboard, i even forgo this bit entirely. stir it all about a bit.
if your pasta isn't cooked, then turn the gas off the frying pan and wait until it is.
when you pasta is cooked, drain it, throw it in the frying pan and stir it under a moderate heat for a minute.
presto! done. if you didn't do the cheese sauce thing then sprinkle cheese on top to taste and eat.
My last baked potato was a disaster! I'm not sure whether it was because the potato was really old, or whether I simply didn't cook it long enough. I didn't prick it with a fork either, but it did get an hour in the oven overall. It turned out really hard and my stomach didn't totally appreciate it. Hmm.
That mushroom/garlic/chilli thing sounds lovely! I'm totally going to try that tomorrow, if I've recovered enough!

also, also, curries: fantastic, because you can make a fuckton of it and store it in the fridge. they also normally taste better over time.
also, also, also, lentils: great for padding out curries, or anything else. i've thrown them in lasagnes.
